week 1: keeper recipes

As we go thru these weeks of keto cooking, I will be keeping track of  recipes that we put together on our own, the ones we want to remember. They will not be fancy or complicated, but they will be delicious!

Crockpot Ribs & Roasted Veggies

*cook boneless ribs and 1 bottle of bbq sauce on high, a little over 5 hours

*roast brussels sprouts (whole) for about an hour at 350, adding a bit of olive oil halfway- toss to coat- add sliced provolone and broil to melt cheese before serving

*slice carrots into 4ths lengthwise, roast carrots with sprouts (but in separate dish), simmering in Tessamae’s Italian dressing, tossing halfway thru to coat

{I salt & pepper most things, either for cooking or serving}

 

Crustless Quiche

*preheat oven to 350

*scramble 8 eggs, set aside

*small chop 1 bell pepper, a handful of mushrooms and 3 slices of turkey bacon- saute all together in a heaping tbsp of coconut oil, season with garlic salt & black pepper

*add veggies into eggs, stir to combine

*Spray cake pan with coconut non-stick and pour eggs/veggies into pan

*bake uncovered for 20 min., slice and serve with salsa and sour cream
